
Sidraw: The sidra is a still natural apple wine that is spontan fermented and without added anything to it. It comes from a beautiful steep slope orchard next to the forest and is a mix of several apple varieties that got 100% harvested by hand. After harvest they got milled and after pressed with a traditional basket press. It fermented the whole November and December 2021 and continued fermentation in spring 2022. Thanks to the microorganisms due to my zero sulfite philosophy it turned into the Sidra-Style like Spanish Apple Wines. It has a very fruity flavor, a bit bubble gummy with a nice acetic acidity. You can taste very ripe fruit, orange zest, citrus, honey. Enjoy it on a hot summers day and don’t forget to pour like a Sidra has to get poured :-P
